Cucumber Sandwich Bites


Total Time: 10 Minutes | Serves 8


Ingredients

  • 2 english cucumbers

  • 2 tbsp greek yogurt

  • 1/2 cup micro greens

  • 6 slices deli chicken

  • 6 slices deli turkey breast

  • 2 tsp mustard

  • 1/2 cup cherry tomatoes halved

  • 6 slices provolone cheese (optional)

  • 1/8 tsp salt or to taste

  • 1/4 tsp pepper or to taste

How to Make it
  1. Prepare the cucumbers: Cut your cucumbers length wise and scrape out the innards with a spoon. Just scrape out the slightly goopy seeds while leaving the interior of the cucumber relatively intact. Season the cucumber lengths with salt and pepper.

  2. Build the cucumber sandwiches: Dollop and spread the greek yogurt on one half. Top this half with the sprouts and meat. Dollop and spread mustard on the other half and top with the halved tomatoes and optional provolone.

  3. Finish the sandwiches: Carefully sandwich the two halves together and slice your sandwiches up into little cucumber medallions. Top with more pepper to taste and serve!
